Induction? The Square takes a Pair!

Liberation chefs love their induction ranges

Liberation Group, owners or partners of almost 70 pubs in Guernsey and Jersey, recently refurbished The Square, one of their busiest eateries in St Helier, Jersey. As part of the upgrade, a new kitchen was installed. With the kitchen expected to deliver up to 400 meals per day it was imperative that any new equipment had the necessary capacity to cope. 

Liberation Group’s Head Chef David Cameron, working with Gary Fogg of local catering equipment distributor Jersey Deep Freeze, identified Falcon equipment as being a potential good fit. They visited the Falcon factory and spent time in the development kitchen, looking in particular at induction and fryers with inbuilt filtration. 

Suitably impressed, an order was placed for a full Dominator Plus cookline, made up of 2 x E3913i induction ranges, 2 x E3840F fryers with filtration, E3407 bain marie, E3800D bratt pan and 3 x cabinets. 

Chef David commented “Dominator Plus is ideal for our kitchen. This cookline provides us with enough capacity to cope with even the busiest service periods, while being reliable and easy to maintain. The inbuilt filtration has made a real difference in the kitchen, with noticeable savings in staff time, oil longevity and quality. The induction ranges are fantastic, our chefs love them because they are so fast, efficient and easy to clean.
