School catering has to balance a lot of priorities. Meals need to be nutritious, consistent, appealing to pupils and produced efficiently within tight service windows. Whether a school is reheating meals delivered from another site or producing hundreds of portions from fresh every day, the right equipment setup makes a major difference.
Falcon offers a range of solutions to suit every level of school catering, from simple regeneration and reheating through to full-scale production kitchens supplying multiple sites. The key is to match the equipment to the way the kitchen operates, the number of meals served, and whether food is prepared on-site or brought in from elsewhere.
Below, we look at four common school catering setups and the type of equipment that can help each one run smoothly.
For schools operating at a more basic level, the main requirement is often regenerating and reheating food rather than cooking from scratch. This could be food purchased from an external supplier, or meals prepared in a central production kitchen and delivered to a smaller site.
In this type of setup, simplicity and flexibility are essential. A convection oven is a strong starting point. Depending on the number of meals being served, this could be a single, double or even triple-stacked oven configuration. Stacked E711 ovens are useful because they allow kitchens to increase capacity without occupying much additional floor space.
A product such as the Variotherm meal delivery trolley is another strong option because it allows food to be heated and served from the same unit. It is mobile, practical and can be plugged in where needed, making it especially useful for schools where kitchen space may be limited or where catering facilities are more basic.
Once the food has been regenerated, schools also need to think carefully about service. A hot plate, hot cupboard or separate servery can help hold food at the right temperature and make lunchtime service more organised. This is particularly important in schools, where pupils often need to be served in a short period of time.
This approach is ideal for schools that are not cooking extensively from fresh, smaller satellite kitchens, or sites receiving meals from another location. It keeps the operation straightforward, efficient and manageable, while still allowing food to be served hot and consistently.
The benefit of the equipment mentioned above is that it can be supplied with a 13A plug, meaning it can be installed in a wide range of locations, inside or outside the kitchen. No water, waste or three-phase power is required.
For schools wanting to cook fresh food on site, but only at a relatively small scale, the kitchen needs a little more flexibility. This type of setup would suit smaller schools, primary schools, nurseries or sites with a lower number of pupils.
At this stage, a kitchen would usually need some form of cooker or range, either gas, electric or induction, depending on the utilities and budget available and the preference of the catering team. A four-zone range can give enough flexibility for everyday cooking, allowing staff to prepare sauces, vegetables, soups and smaller batch dishes.
Alongside the range, a stacked convection oven can be a practical choice. Falcon offers options that can be configured as one, two or three ovens, depending on the scale of the operation. This gives schools the ability to bake, roast and regenerate food without needing a full production kitchen setup.
Where budget allows, a compact combination oven would be another excellent option. A combi oven gives the kitchen more versatility because it can steam, roast, bake and regenerate within one unit. For smaller school kitchens, this can be particularly valuable because one piece of equipment can support a wide range of menu items.
A servery, hot cupboard or hot holding solution would also be needed to keep food ready for service once it has been cooked. This helps make the transition from preparation to lunchtime service much smoother.
Small-scale cooking is the right choice for schools that want to prepare fresh meals on site without needing a large production kitchen. It gives catering teams enough equipment to cook proper, varied meals while keeping the setup compact, affordable and easy to manage.
For larger schools producing fresh meals every day, the kitchen needs to step up in terms of power, capacity and resilience. At this level, the equipment has to support bigger batch cooking, faster production and the ability to serve a high number of pupils within a limited lunch period.
A larger school kitchen would usually move up to a six-zone cooker, again available in either gas or induction depending on the site. For kitchens using large pans or stock pots, especially around the 50-litre mark, a more powerful induction option may be needed. A four-zone induction unit with 3.5kW or 5kW zones can provide the power required for large pots, sauces, soups and bulk preparation.
The biggest shift at this level is usually the move to a full-size combi oven. A 10-grid or 20-grid combi oven would be suitable for larger school kitchens, while a 16-grid model could offer a very practical option depending on the space and volume required.
When production starts to involve larger quantities, such as cooking more than 30 or 40kg of meat, a small bratt pan may also become necessary. Bratt pans are highly versatile and can be used for browning, braising, shallow frying and bulk cooking, making them ideal for dishes such as mince, stews, sauces and casseroles.
A steamer can also be introduced to support the kitchen and free up capacity in the combi oven. This is particularly useful for vegetables, rice, potatoes and other high-volume items. By moving these tasks into a dedicated steamer, the combi oven can be kept available for roasting, baking or mixed-load cooking.
Something worth considering is high-speed ovens, as they can also provide valuable extra capacity during busy lunch periods. Our Oracle models have simple touchscreen controls and pre-programmed menus which make them easy to use, allowing trained front-of-house staff to rapidly cook or reheat items such as pizzas, paninis, baked potatoes and grab-and-go options. This expands menu choice and helps manage demand without occupying valuable space in the main kitchen or combi oven.
At this scale, schools may also need to consider fryers and hot cupboards. Fryers support menu variety, while hot cupboards help hold cooked food safely and efficiently before service.
This setup is ideal for larger schools cooking from fresh in significant volumes. It gives the kitchen enough power and capacity to produce a wide menu, manage bulk preparation and serve large numbers of pupils efficiently. The exact number of cookers, ovens and holding units will depend on the size of the school, but this level of equipment provides the foundation for a high-output school kitchen.
At the highest level, some school kitchens are not only cooking for pupils on site but also producing meals for other schools or satellite units. This is a full production setup, where volume, workflow and food safety become even more important.
For this type of operation, multiple high-powered cooking units are usually required. A kitchen may need several four-zone induction units, with 3.5kW or 5kW zones, to handle continuous large-scale production. In some cases, three or four units may be needed depending on the number of meals being prepared each day.
Large-volume equipment becomes essential at this stage. Bratt pans, steamers, boiling pans and braising pans all play an important role in producing food in bulk. Boiling pans are ideal for soups, stocks, sauces, pasta, potatoes and other large-volume items, while braising pans are excellent for stews, curries, casseroles and batch-cooked dishes.
These pieces of equipment allow catering teams to produce consistent results when working with very large quantities, often in excess of 100kg.
If food is also being served on site, the kitchen will still need suitable hot cupboards and holding equipment. These allow meals to be kept at the right temperature before service, helping the kitchen manage timing across both production and lunchtime delivery.
Bulk production is the right choice for central school kitchens, local authority catering hubs or large education sites preparing meals for multiple locations. It provides the capacity, durability and control needed to produce very high volumes of food consistently, safely and efficiently.
